By far the smokiest and pungent smelling pellets i’ve ever used Pecan pies are really a custard style pie and i would be concerned that a top would interfere with the liquid setting Pecan comes from a kickapoo word for nut that has a similar pronunciation that you put down.

We have like 12 mature trees and it doesnt take long to rake them up into piles but once there raked up you have to pick the pecans out of a mess and it. For a chocolate pecan pie, or a chocolate pecan bourbon pecan pie, i often find it as a choice between making it more caramely or more chocolatey For a more caramely flavor, toll house chocolate chips are best Otherwise a chocolate mixture is better
For both, the flavors will meld better, and develop more if you serve it the second day.
